For everyone that is spending time baking in the kitchen, here is another recipe for you! This one is a great option for clearing out some pantry items that you maybe are saving for other food items. This recipe is also shelf-stable, so you can bake them and they will keep for awhile.
This recipe is basically a rice krispie treat made with cereal and fruit. These cereal squares can be made with strawberry flavor so they have some added sweetness, but really you can add any flavoring or topping that you want to these.
For this recipe you will need these ingredients, or whatever you can find in the pantry:
5 tablespoons unsalted butter (save the paper it’s wrapped in!)
10.5 oz (1 bag) marshmallows
½ cup strawberry jam
OR
½ cup freeze dried strawberries
OR
¼ cup strawberry syrup
1 cup white chocolate chips
AND/OR
½ cup nonfat milk powder
10 cups cereal/cookies*
Here are the directions for making these squares:
Prep!
Spray your baking pan.
Melt!
In a very large, microwave-safe bowl, melt the butter and marshmallows together for 2 minutes. Remove from the microwave and stir, then microwave for 1 more minute. Stir until smooth.
Mix-ins!
Stir the strawberry into the melted marshmallows so everything is mixed together well and sticky.
Time to add some cereal. Add the cereal (cookies or whatever you choose) and white chocolate chips and/or milk powder the marshmallow mixture and stir with a spatula until every bit is coated. You cannot over mix this.
Allow the mixture to cool before handling it further.
Scrape the mixture into the prepared pan and spread evenly with a greased spatula or with the butter paper (preach, gram!) Let cool until firm, 15 to 20 minutes, then cut into 3 rows of 3 squares to make 9 treats total. Store in an airtight container on your counter for up to 5 days.
