One of the most common recipes with bread involves adding a dash of citrus. This citrus loaf recipe is really more of a dessert, due to the sugar, and the citrus flavor is interchangeable, so this loaf can have lots of different flavors.
Here are the ingredients that you will need to make the citrus loaf:
- 3 large eggs
- 1 cup sugar
- 1 cup (8 ounces) sour cream or Greek yogurt
- 4 lemons, zested (this could also be limes, grapefruit, oranges or any citrus!)
- OR 1 tablespoon lemon extract
- 1/2 cup vegetable oil
- 1 1/2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
First, you need to pre-heat the oven to 350 degrees Fahrenheit. Then, in a large bowl, whisk all of the eggs, sugar, and yogurt together until everything is combined.
Then, whisk in oil, zest or extract until the mixture is fully combined. Next, you can whisk in all of the flour, baking powder and salt. It’s a good idea to whisk everything together by hand as to not overmix the batter.
Pour it into a 9×13 bread pan. Finally, you need to bake the pan at 350 degrees Fahrenheit for 55-60 minutes. Check the mixture with the toothpick, and if it comes out clean, then the loaf is done.
Next, you need to make the sugar soak for the loaf. Here are the ingredients:
- 1 cup confectioners’ sugar
- 6 tablespoons lemon juice
While the loaf is baking, you should make the soak. First, whisk together the powdered sugar and lemon juice until smooth. Once the loaf is done, pour the soak on the loaf while it’s cooling so it sops up all the flavor and moisture.
Finally, here are the ingredients that you need to make the glaze:
- 1 cup confectioners’ sugar
- 2 tablespoons lemon juice
First, whisk together the sugar and lemon juice until it’s smooth. Once the cake has cooled completely (which takes about 2 hours) pour the glaze atop the cake, so it creates a nice sugary layer. Now, the loaf can be sliced and served.
